Red Potato Salad — perfectly vibrant and flavorful potato salad ready in 15 minutes. Creamy and chunky. Your next go to salad recipe for potlucks, barbecues and picnics. 

Red Potato Salad

Red potato salad is a delicious side dish that delivers in both the flavor and texture department. Red potatoes are ideal for salads because of their firm, waxy consistency and mildly sweet taste. And I love the fact that they do keep their shape in the salad and not fall apart .

Yes, they hold up well when mixed with other ingredients and lend their vibrant red hue making the final product more visually appealing.

With every forkful, you actually get bites of potato rather than a creamy cold mash.

Some like cold potato salad , if you fall on that camp ,  you can make it ahead of time and let the flavors come together, it tastes much better the next day , with layers upon layers of flavor.

For me , it just depends on other variables – warm or chilled works just fine with me. Am more about the flavor ! The color and aromatics may seem pungent, but flavors make you stay.

Speaking of taste, am always adjusting as I go , a little bit of this, a little bit of that . For the herbs you can play around with them . I have used fresh  thyme, parsley , and dill. Go easy with the thyme it might over power the other herbs . And if you want to leave them out as well that’s fine too! Better be safe that sorry

Just use this  homemade creole seasoning here to add more flavor. 

Red Potato Salad

  If you are curious  about sweet relish , it’s a  combination  of  minced cucumber, bell pepper , sugar,vinegar  and other spices , depending on individual or brands preference . It adds not only flavor but sweetness to the potato salad. Available in most supermarkets in the U.S.

Red Potato Salad

Herbed Red Potato Salad -- perfectly vibrant and flavorful potato salad ready in 15 minutes. Your next go to salad recipe which is perfect for potluck or as side dish for diinner

Ingredients

  • 2 pounds red new potatoes or waxy white scrubbed, cut in chunks
  • 5 large boiled eggs
  • 1 cup mayonnaise
  • ½ lemon squeezed juice
  • 1 1/2   tablespoons Dijon mustard
  • ½ cup chopped red onions
  • ½ cup sweet relish
  • 1/3 cup celery
  • 1 teaspoon Creole seasoning adjust to taste
  • salt and pepper to taste
  • 2 Tablespoons or more Herbs (Parsley , Dill) optional

Instructions

  • Bring a pot of salted water to a boil. Then add potatoes, cover and cook until tender but still firm to the touch, about 8 -10 minutes or more depending on the size of potatoes . Start checking after 7 minutes .Drain water and let it cool . Add to bowl
  • Chop boiled eggs , add to the potatoes, red onions, celery
  • In a medium bowl combine the  mayonnaise, relish, Cajun spice, mustard, lemon juice and mayonnaise. Mix well, add to the potato, onion, celery, herb and egg mixture. Adjust for salt, creole seasoning and pepper .Refrigerate until ready to eat

    It’s been so hot and I was craving potato salad but misplaced my usual recipe. My husband said “find a different recipe!” My first stop: Immaculate Bites of course! This was the best, and most unique potato salad I’ve ever made and possibly ever tasted. The addition of the Creole seasoning (also your recipe), gives it a unique tangy twist. I love it! Your recipes are always a hit – so glad I found your website. 🙂

    Really great recipe. I didn’t have dejon mustard so I used regular mustard and a few shakes of dry mustard. I didn’t have cajun spice and substituted it with old bay spice. I also didn’t have a lemon and used half a lime instead. It turned out fantastic. Thank you

    Made this for fathers day – I was looking for a potato salad that didn’t need to be made hours in advance.
    Made mine without egg as I had one guest that didn’t like hard boiled eggs. This was relatively straightforward- east to follow- super flavorful and everyone love loved loved it. Thank you- will keep this in my recipe book.

    Wow, wow, wow!!! I am EXTREMELY picky about potato salad but I liked the ingredient list for this one so I decided to give it a try. It was amazing! My fiancé loved it too and couldn’t stop eating it. Great recipe!

    This is an amazing potato salad! I will be using this recipe for my next, for sure! The cajun seasoning adds just a hint of heat but the boldness was not missed! Yim!

    I really enjoyed this recipe! It was very flavorful, not too heavy, and a great spin on traditional potato salad. I used lime juice and added cilantro as this is my favorite herb. I would definitely make this again!

    This is so wonderful. I have a houseful of picky eaters so I was kinda thinking I’d be the only one eating this potato salad because my family always wants to eat the family potato salad that’s been handed down. To my surprise they all loved it

    I like it, it’s nice recipe! It would work even if you changed the Red Potato to another Starchy Vegetable and or Pasta. My taste pallet is one that’s spicy and luv all kinds of spices and wants Flavor, so I do like the optional addition of the Spice at the end which I’d surely add. I like flavorful food! For making it, I’d add a few Scallions to it. Though I like Mayo, I don’t add it to stuff as much as in past, so for me I might change it up making it by going maybe 1/2 Mayo and 1/2 Greek Yoghurt. Or maybe adding some Creme Fraiche as well. But that’s me liking to change things up for taste and variations being adventurous. But it’s certainly a great salad as is and like it.
